What is a Tongguan Bun?
The Tongguan bun is a distinct style of Chinese flatbread known for its uniquely crispy, flaky texture and spiral-layered structure. Unlike the plain, bread-like Baijimo bun commonly used in Xi'an-style Roujiamo, the Tongguan bun features paper-thin layers of dough separated by oil, formed into a round bun that bakes up with a crisp exterior and tender, layered interior.
