Shanghai Juheng provides custom-engineered lavash production lines designed to process pre-mixed dough into finished, baked flatbreads. While we have extensive experience in dough sheeting, stretching, baking, and stacking systems for various flatbreads, each lavash line is developed in close collaboration with the customer to meet their specific product requirements – thickness, size, capacity, and texture.
Lavash is a traditional thin flatbread characterized by its flexible, non-layered structure, achieved through specialized stretching rather than lamination. Our engineering team can design and manufacture a complete line that includes: multi-stage sheeting, ultra-thin stretching (less than 1mm), cutting, baking, cooling, and automatic stacking.
We do not offer a “standard” lavash line; instead, we work with you to define the optimal configuration based on your dough recipe, target output, and available factory space. All food-contact parts are SUS304 stainless steel, and the system is PLC-controlled for recipe management.

Typical Process Flow – Engineered to Your Requirements
The line accepts pre-mixed dough prepared offline. The dough is loaded into a hopper, then proceeds through the following stages, each of which can be customized:
1. Multi-Stage Sheeting
Dough is progressively reduced to an initial uniform sheet using adjustable rollers.
2. Ultra-Thin Stretching
A specialized stretching mechanism reduces thickness to the target range (less than 1 mm) without tearing – critical for lavash flexibility.
3. Cutting
Rotary or reciprocating die cuts individual lavash sheets (rectangular, oval, or custom shapes).
4. Baking (Tunnel Oven)
Multi-zone oven with independent top/bottom temperature control. Dwell time adjustable.
5. Cooling
Multi-tier cooling conveyor gradually reduces temperature to prevent condensation.
6. Stacking
Automatic counter stacker arranges finished lavash into preset batch counts.
How We Develop Your Custom Lavash Line
Step 1 – Requirement Analysis
You provide target output (kg/hour or pieces/hour), product dimensions, dough recipe, and factory space. We discuss automation level and budget.
Step 2 – Engineering Design
Our engineers design the line layout, specify roller gaps, stretching mechanism parameters, oven zone configuration, and cooling/stacking modules. Drawings are shared for approval.
Step 3 – Manufacturing
Upon approval, we manufacture all components in our Shanghai facility. You are welcome to inspect progress.
Step 4 – Factory Acceptance Test (FAT)
Before shipment, we run the line using your supplied dough (or a representative substitute) to verify performance. Adjustments are made on-site.
Step 5 – Installation & Commissioning
We ship, install, and commission the line at your facility, including operator training.
Step 6 – After-Sales Support
Remote diagnostics, spare parts supply, and optional maintenance contracts.
